Easy crab cakes


I was looking for something very easy, quick,and light to make for dinner. I didn't take anything out and rummuged the cabinets and found that I had one can of crab meet and decided to get to work.

With one can I made four crab cakes. Perfect for just me and Yanni.

So easy to do, simply open a can of crab meet, dump the excess water from can, dump crab meat into a medium sized bowl and mix with the following ingredients: 1/4 cup of bread crumbs, 1/4 teaspoon of paprika or red pepper, 1 egg I used 2 tablespoons of egg white, 1 tablespoon of mayonnaise (optional), 1/2 tablespoon of lemon juice, garlic powder and cayenne; fold in crab. You can add more of something or less depending on what you have available and your personal preference.

Next, make balls with the crabmeat and roll in the breadcrumbs, flatten a bit like a patty. Place crab cakes in pan with hot olive oil and cook on each side for about 5 minutes.



For the easy remoulade I drizzeled on top, I combined 1/4 cup of mayo, 1 teaspoon of dijon mustard, lemon juice, few drops of worcestershire sauce, and paprika. This makes a really nice light dinner and goes great with a big salad and/or steamed veggies.

Kale and Pineapple smoothie


I love making smoothies in the morning to enjoy with my breakfast. They are so refreshing and it's a great way to add fiber and protein to your breakfast. I swear it gives me more energy. They are really quick and easy to make. You don't need any fancy machines just a blender. I got my blender from Target 3 years ago for $5.00 and it's been pumping out smoothies and milkshakes for years.

Ingredients

1 cup unsweetened almond milk (or greek yogurt)
1 cup packed chopped kale
1 cup diced pineapple
1 banana
1 tablespoon of chia or protein powder (optional)

Throw all these in a blender until smooth and enjoy! So easy, filling, and most importantly, it's good for you.
