Coconut Pound Cake


I love having fresh baked treats in the house. Not a week goes by that I don't bake. It relaxes me and makes me happy. I listen to my favorite songs, combine all the ingredients, and bake. Having some homemade baked treats around not only makes me happy, fulfills my sweet tooth desire, but they make an easy morning breakfast or an afternoon treat. I love a moist pound cake and coconut, and decided to combine my two loves into one delicious treat.

Ingredients
1 1/2 cups of all purpose flour
3/4 teaspoon baking powder
1/2 teaspoon of salt
1 stick of softened unsalted butter
1/2 cup of coconut oil (room temperature - not liquid)
1 teaspoon of vanilla extract
3/4 cups of sweetened condensed milk
3 large eggs
1 1/2 cups of shredded coconut

Preheat oven to 325 degrees.


Cream the butter, coconut oil, and sugar until light and fluffy.

In a separate bowl, combine the flour, salt, and baking powder in a bowl.


Add the condensed milk and combine. Add the flour mixture and mix together.


Combine the eggs and the vanilla extract in the bowl. Next, add the coconut.


Pour the batter into a greased loaf pan and bake for 1 hour and 20 minutes (the time may vary depending on your oven. You will know when it's ready when you smell sweet coconut throughout the house and it is golden brown. I stick a knife right into the middle and know it is ready if nothing is on the knife.


This was exactly what I was looking for and needed. It came out exactly as I hoped it would: moist and slightly sweet with a hint of coconut. The house smells divine!

Easter Recap


I spent Easter weekend with my family and my sister hosted Easter brunch at her home this year. She added so many sweet details, like these mini easter cookies in these cute bags she made.  I took photos of some of my favorite things from that brunch for her blog: http://www.adelicategift.com
These "some bunny loves you" cards are a download available on her Etsy shop. Just fill a cellophane bag with goodies and tie with a pastel pink or blue bow and these can be used to for spring, easter, or a baby shower themed party.


She also made this pretty pink "Happy Spring" banner that she hung above the fireplace.


And made these adorable bunny ear napkins for each guest. She and I were the only ones that kept the bunny ears untouched, while everyone else undid them. Can't you tell we're sisters?


We enjoyed a roasted lamb, ham, and many veggies and sides like roasted potatoes and carrots.


And we enjoyed many desserts like this beautiful yummy turquoise cake which was vanilla and raspberry with pretty flowers and eggs on top.


She also made all these cute signs that she placed on the dessert table.
