easy key lime pie

Recently found this recipe on one of my favorite blogs, A Beautiful Mess, and just had to try it once I realized just how easy it is.

Ingredients (adapted from A Beautiful Mess)

6 Limes
1 Can (14 oz) of Unsweetened Condensed Milk (low fat)
1 Graham Cracker Crust
3 Egg Yolks
1/2 cup of Shredded Coconut

Beat the condensed milk with the egg yolks until fully combined. Add the lime juice and beat again until combined. Add the shredded coconut to the mix I also sprinkled some on top of the crust. You can never have too much coconut.

Pour in your filling and put pie in oven at 375 degrees for 16 minutes.

Allow the pie to cool completely and then chill the pie until it's completely cold in the fridge.

Once the pie is completely cold in the fridge add fresh whipped cream and sprinkle the toasted coconut on top. To toast the coconut simply put the shredded coconut on a pan on the stovetop at medium, the coconut will become a beautiful brown color.

I apologize for the missing crust piece in the picture above, but I could not resist breaking a piece off the graham cracker crust once it got out of the oven. The picture  might not be complete, but it was delicious and worth it. I pretty much could finish this all alone, but then had to share it. Its so good, you won't regret making it, but then you will want to make 2-3 at a time. Trust me and I am sorry. But you will thank me later.

Enjoy!
